Ingredients

  • 4 pieces (about 1.5 lbs) bone-in, skin-on chicken thighs
  • 3 tbsp honey
  • 4 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 whole (juiced) lime
  • 1 tsp fresh chili or red pepper flakes

Instructions

    Pat chicken thighs dry and season generously with salt and pepper on both sides.

    Heat oil in a large skillet over medium-high heat until shimmering, about 1 minute.

    Place chicken skin-side down in the skillet and sear without moving until golden, 6–7 minutes.

    Flip chicken. Mix honey, garlic, fish sauce, lime juice, and chili in a small bowl, then pour over thighs.

    Cook 8–10 minutes until glaze caramelizes and chicken reaches 165°F at the thickest point.
