Ingredients

  • 1 sheet (about 10x10 inches) puff pastry sheet
  • 1 cup (hulled and sliced) strawberries
  • 1 cup blackberries
  • 3 tbsp sugar
  • 1 tbsp cornstarch
  • 1 large (beaten, for egg wash) egg
  • ½ cup (whipped, for serving) heavy cream
  • 4 leaves (for garnish) fresh mint leaves

Instructions

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a bowl, combine the 1 cup sliced strawberries, 1 cup blackberries, 3 tbsp sugar, and 1 tbsp cornstarch. Toss gently to coat the fruit evenly.

    Roll out the 1 puff pastry sheet on a lightly floured surface to a 12x12 inch square. Spoon the fruit mixture down the center, leaving a 2-inch border on each side.

    Fold the pastry over the filling and pinch the edges to seal. Place the strudel seam-side down on the prepared baking sheet.

    Brush the top with the beaten egg. Cut 3 small slits on top for steam to escape.

    Bake for 25-30 minutes, until the pastry is puffed and deep golden brown. Let cool for 10 minutes before slicing.

    Serve warm slices with a dollop of the 0.5 cup whipped cream and garnish with the 4 mint leaves.
