Ingredients
- 1 sheet (about 10x10 inches) puff pastry sheet
- 1 cup (hulled and sliced) strawberries
- 1 cup blackberries
- 3 tbsp sugar
- 1 tbsp cornstarch
- 1 large (beaten, for egg wash) egg
- ½ cup (whipped, for serving) heavy cream
- 4 leaves (for garnish) fresh mint leaves

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a bowl, combine the 1 cup sliced strawberries, 1 cup blackberries, 3 tbsp sugar, and 1 tbsp cornstarch. Toss gently to coat the fruit evenly.

Roll out the 1 puff pastry sheet on a lightly floured surface to a 12x12 inch square. Spoon the fruit mixture down the center, leaving a 2-inch border on each side.

Fold the pastry over the filling and pinch the edges to seal. Place the strudel seam-side down on the prepared baking sheet.

Brush the top with the beaten egg. Cut 3 small slits on top for steam to escape.
