Ingredients

  • 1 sheet (about 9x9 inch) puff pastry sheet
  • 1 cup frozen raspberries
  • 1 cup frozen blackberries
  • 3 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 large egg

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a bowl, toss the 1 cup frozen raspberries, 1 cup frozen blackberries, 3 tbsp sugar, 1 tbsp cornstarch, and 1 tsp lemon juice until well coated.

    On a lightly floured surface, roll the puff pastry sheet into a 10x10 inch square. Transfer to the prepared baking sheet.

    Fold each edge of the pastry inward by about 1 inch to create a border, pressing gently to seal the corners.

    Prick the center of the pastry with a fork, leaving the border un-pricked. Brush the border with the beaten egg.

    Spoon the berry mixture into the center of the pastry, spreading evenly within the border.

    Bake for 25-30 minutes, until the pastry is puffed and golden brown and the berries are bubbling.
