  • 2 large egg
  • 1.5 cups panko breadcrumbs
  • 1 cup vegetable oil
  • ½ cup mayonnaise
  • 2 tablespoons sriracha
  • 1 whole lime

    Pat the 1 lb shrimp dry with paper towels. Set up three shallow bowls: 1 cup flour, 2 beaten eggs, and 1.5 cups panko breadcrumbs.

    Heat 1 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes. Test with a breadcrumb—it should sizzle immediately.

    Dredge each shrimp in flour, then egg, then panko, pressing gently to coat. Work in batches to avoid crowding the pan.
