Fried Rice with Meat

A quick and satisfying weeknight fried rice loaded with tender meat, fluffy eggs, and fresh green onions. Made in a single skillet, this dish comes together in about 30 minutes and is perfect for using up leftover rice.

Ingredients

  • 4 cups cooked rice
  • 1 lb ground beef
  • 3 large eggs
  • 4 stalks green onions
  • 3 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 2 cloves garlic
  • ½ tsp salt

Instructions

    Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the 1 lb ground beef and cook, breaking it up, until browned and cooked through, about 6-8 minutes. Remove beef to a plate.

    Reduce heat to medium. Add 1 tbsp vegetable oil to the skillet. Crack the 3 eggs directly into the skillet and scramble them until just set, about 2 minutes. Transfer eggs to the plate with beef.

    Add the remaining 1 tbsp vegetable oil to the skillet. Add the 2 minced garlic cloves and the white parts of the 4 sliced green onions. Cook until fragrant, about 30 seconds.

    Add the 4 cups cooked rice to the skillet. Press it into an even layer and let it sit undisturbed for 2 minutes to get crispy bits.

    Stir-fry the rice for 3-4 minutes, breaking up clumps, until the rice is hot and slightly toasted.

    Return the beef and eggs to the skillet. Add the 3 tbsp soy sauce and 0.5 tsp salt. Toss everything together until well combined and heated through, about 2 minutes.

    Stir in the remaining green onion tops. Serve hot.
