Ingredients

  • 2 cups cooked rice
  • 2 large eggs
  • 3 stalks green onions
  • 2 tablespoons ikura (salmon roe)
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • ½ teaspoon salt
  • ¼ teaspoon white pepper

Instructions

    Chop green onions, separating white and green parts.

    Heat oil in a wok over high heat; scramble eggs until just set, then remove.

    Add white parts of onion; stir-fry for 30 seconds until fragrant.

    Add rice, breaking clumps; stir-fry for 2-3 minutes until hot.

    Season with soy sauce, salt, and white pepper; mix well.

    Fold in scrambled eggs and green parts; cook for 1 minute.

    Serve topped with ikura.
