Ingredients
- 300 g prawns, peeled and deveined
- 1 large egg
- 100 g breadcrumbs
- 2 green chilies, finely chopped
- 1 lemon lemon wedges
- 250 ml vegetable oil, for frying

Pat the 300g prawns dry and chop them roughly. In a bowl, mix the prawns with the 2 chopped green chilies and a pinch of salt until well combined.

Shape the prawn mixture into 4 flat, oval cutlets. Beat the 1 egg in a shallow dish and spread the 100g breadcrumbs on a plate.

Dip each cutlet into the beaten egg, then coat evenly with breadcrumbs, pressing gently to adhere.

Heat the 250ml vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes. Fry the cutlets in batches without crowding, turning once, until golden brown and cooked through, about 3-4 minutes per side.

Drain the cutlets on paper towels. Serve hot with the lemon wedges and extra green chilies on the side.
