Ingredients

  • 1 lb ground beef
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • ½ cup plain yogurt
  • 4 cups salad mix (arugula, cucumber, cherry tomatoes, radishes)

Instructions

    In a bowl, mix 1 lb ground beef with 1 tsp salt and 0.5 tsp black pepper. Shape into 12 small meatballs, about 1 inch each.

    Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes.

    Divide 4 cups salad mix among plates. Top with the hot meatballs.

    Dollop 0.5 cup yogurt over the salad and meatballs. Drizzle with your favorite red sauce (like sriracha or ketchup) if desired.
