Ingredients
- 1 tbsp butter
- 2 whole large eggs
- 2 slices bread, sliced
- 1 slice cheddar cheese
- 1 pinch salt and pepper
- 1 slice or leaf tomato or lettuce (optional)

Heat butter in a small skillet over medium-high until foaming, about 60 seconds.

Crack both eggs into the skillet. Cook without stirring until whites are set, yolks still soft, ~3 minutes.

Toast the bread slices until golden and crisp on both sides.

Slide both fried eggs onto one toast slice. Top with cheese, tomato or lettuce if using, and second toast slice.
