Ingredients

  • 4 slices bacon slices
  • 2 large eggs
  • 2 slices cheddar cheese slices
  • 2 whole croissants, split
  • 1.5 cups frozen roasted potatoes
  • 1 batch frozen spinach, fresh banana, and milk for smoothie

Instructions

    Cook bacon in a large skillet over medium heat until crispy, about 5 minutes. Transfer to a paper towel.

    Crack eggs into the same skillet and cook sunny-side up until whites set but yolks jiggle, about 3 minutes.

    Top each egg with a cheese slice and a lid or foil to melt, 1 minute.

    Toast croissants cut-side down in the skillet 1 minute until golden and warmed through.

    Assemble sandwiches: egg and cheese on bottom half, bacon on top, press together gently.

    Warm roasted potatoes in the skillet while you blend smoothie (spinach, banana, milk). Serve together.
