Ingredients

  • 2 slices bread (sourdough or your favorite)
  • 1 whole avocado, ripe
  • 1 whole eggs
  • 1 tbsp butter
  • ½ whole lemon
  • ¼ tsp red pepper flakes

Instructions

    Melt butter in a small skillet over medium heat, then add bread slices.

    Toast bread until golden brown on both sides, 2–3 minutes total, then move to a plate.

    Return skillet to heat. Crack egg into the pan and cook until whites set but yolks jiggle, ~3 minutes.

    Halve avocado, scoop flesh onto toast, and smash with a fork until chunky.

    Season avocado with salt, pepper, and a squeeze of lemon juice.
