Ingredients
- 1.5 whole ripe avocados
- 4 whole large eggs
- 4 slices sourdough or sturdy bread
- 2 tbsp butter
- ½ whole fresh lemon
- ¼ tsp red pepper flakes or hot sauce

Toast bread until golden and crispy, about 2 minutes per side.

Halve avocados, scoop into a bowl, and mash with a fork until chunky. Squeeze lemon over and season with salt and pepper.

Heat 1 tbsp butter in a skillet over medium-high until foaming. Crack 2 eggs into the pan, let whites set, then flip for runny yolks or cook through, ~3 minutes total.

Repeat step 3 with remaining butter and eggs, or scramble all 4 together if preferred.

Spread avocado on each toast slice. Top with a fried or scrambled egg.
