Ingredients

  • 1 whole bagel
  • ½ whole avocado
  • 1 whole egg
  • 1 tbsp butter
  • ½ cup blueberries
  • ½ cup strawberries, hulled and halved

Instructions

    Split the bagel and toast it in a skillet over medium heat until golden brown, about 2 minutes per side.

    Slide the toasted bagel onto a plate. Scoop the avocado onto the bottom half and mash it lightly with a fork.

    Melt butter in the same skillet over medium heat. Crack the egg directly into the pan and fry until whites set but yolk jiggles, 3-4 minutes.

    Slide the fried egg onto the avocado half. Pinch with salt and pepper.

    Arrange blueberries and strawberries on the side of the plate. Serve immediately.
