Ingredients
- 2 slices bread (thick-cut white, sourdough, or brioche)
- 1 large eggs
- 1 tbsp butter
- 1 tbsp mayonnaise
- ¼ tsp salt
- ⅛ tsp black pepper

Toast bread slices in a skillet over medium heat until golden brown, about 2 minutes per side.

Spread mayonnaise on one slice of toast. Set aside on a plate.

Return skillet to medium heat and melt butter until foaming, about 30 seconds.

Crack egg into pan. Cook 3–4 minutes until whites set but yolk still jiggles when you shake the pan.
