Ingredients
- 8 pieces chicken drumsticks
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large eggs
- 4 medium potatoes
- 2 cups vegetable oil
Instructions
- 1
Cut the 4 potatoes into thin sticks and soak in cold water for 10 minutes. Pat dry thoroughly with a clean towel.
- 2
In a shallow dish, mix 1 cup flour, 1 tsp paprika, 1 tsp salt, and 1/2 tsp black pepper. In another dish, beat the 2 eggs.
- 3
Heat 2 cups vegetable oil in a deep skillet over medium-high until a pinch of flour sizzles, about 5 minutes.
- 4
Dip each of the 8 drumsticks into the egg, then coat in the flour mixture. Shake off excess and set aside.
- 5
Fry the chicken in batches without crowding, turning occasionally, until golden brown and cooked through (internal temp 165°F), about 12-15 minutes per batch. Drain on paper towels.
- 6
In the same oil, fry the potato sticks in batches until golden and crispy, about 5-7 minutes. Drain and sprinkle with salt.
- 7
Serve the fried chicken and fries hot with ketchup and mustard on the side.
