Ingredients
- 1.5 lb chicken breast
- 1 cup all-purpose flour
- 2 large eggs
- 2 lb potatoes
- 2 cup vegetable oil
- 1 tsp salt
- ½ tsp black pepper
- ½ cup ketchup
Instructions
- 1
Cut the 2 lb potatoes into thin sticks and soak in cold water for 10 minutes. Pat dry thoroughly with a clean towel.
- 2
Slice the 1.5 lb chicken breast into 1-inch wide strips. Season with 0.5 tsp salt and 0.25 tsp black pepper.
- 3
Set up a dredging station: place 1 cup flour in one bowl, and beat 2 eggs in another. Dip each chicken strip into the flour, then the egg, then back into the flour.
- 4
Heat 2 cups vegetable oil in a deep skillet over medium-high until a pinch of flour sizzles. Fry the chicken strips in batches, turning occasionally, until golden brown and cooked through, about 6-8 minutes per batch. Drain on paper towels.
- 5
In the same oil, fry the potato sticks in batches until golden and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.
- 6
Sprinkle the fries with the remaining 0.5 tsp salt and 0.25 tsp black pepper. Serve the chicken strips and fries hot with 0.5 cup ketchup for dipping.
