Ingredients

  • 2 medium boneless chicken breast
  • 1 cup breadcrumbs
  • 2 large eggs
  • 2 large potatoes
  • 1 cup vegetable oil
  • 1 teaspoon salt

    Cut the 2 potatoes into thin sticks and soak in cold water for 5 minutes. Pat dry with a towel.

    Heat 1 cup vegetable oil in a large skillet over medium-high. Fry the potato sticks in batches until golden and crisp, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with 1/2 teaspoon salt.

    Pound the 2 chicken breasts to an even 1/2-inch thickness. Season both sides with the remaining 1/2 teaspoon salt.

    Beat the 2 eggs in a shallow bowl. Dip each cutlet in the egg, then press into the 1 cup breadcrumbs to coat evenly.

    In the same skillet with oil over medium-high, fry the breaded cutlets until golden brown and cooked through, about 3-4 minutes per side. Serve hot with the fries.
