Ingredients

  • 1 head cauliflower
  • 1 ripe mango
  • ½ cup plain yogurt
  • 2 tbsp sesame seeds
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1

Cut the 1 head cauliflower into florets and steam or boil in salted water until very tender, about 12 minutes. Drain well.

  2. 2

While cauliflower cooks, peel and slice the 1 ripe mango into thin strips. Set aside.

  3. 3

Toast the 2 tbsp sesame seeds in a dry skillet over medium heat until golden and fragrant, about 2 minutes. Remove from pan.

  4. 4

In a food processor or with a potato masher, combine the cooked cauliflower, 0.5 cup yogurt, 2 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp pepper. Blend until smooth and creamy, about 1 minute.

  5. 5

Spoon the mash onto a serving plate. Top with the mango slices and sprinkle with the toasted sesame seeds. Serve warm or at room temperature.

  6. 6

Optional: drizzle with extra olive oil or a squeeze of lime if you have them.
