Ingredients

  • 1.5 cups all-purpose flour
  • ½ cup cornstarch
  • ½ cup butter, softened
  • 2 large egg yolks
  • ¾ cup dulce de leche
  • ¼ cup powdered sugar

Instructions

    In a bowl, mix 1.5 cups flour, 0.5 cup cornstarch, and a pinch of salt. Cut in 0.5 cup softened butter until crumbly, then stir in 2 egg yolks and 2 tbsp cold water to form a dough.

    Roll dough to 1/4 inch thick on a floured surface. Cut into 2-inch rounds and place on a baking sheet. Bake at 350°F until edges are lightly golden, about 10-12 minutes. Cool completely.

    Spread 1 tbsp dulce de leche on half the cookies, top with remaining cookies to make sandwiches. Dust with powdered sugar or dip in melted chocolate if desired.
