Ingredients
- 1 lb calamari rings
- ½ cup all-purpose flour
- 1 large carrot
- 1 medium zucchini
- 1 medium onion
- 3 tbsp olive oil
- 1 whole lemon
- ¼ cup fresh parsley

Pat the 1 lb calamari rings dry with paper towels. In a shallow dish, place the 0.5 cup flour and season with salt and pepper.

Heat 2 tbsp of the olive oil in a large skillet over medium-high. Add the 1 sliced onion, 1 julienned carrot, and 1 julienned zucchini. Cook, stirring, until tender and lightly browned, about 8 minutes. Transfer to a plate.

Dredge the calamari rings in the seasoned flour, shaking off excess. Add the remaining 1 tbsp olive oil to the skillet and heat over medium-high.

Fry the calamari in a single layer, working in batches if needed, until golden and crispy, about 2-3 minutes per side. Do not overcrowd the pan.

Return the vegetables to the skillet with the calamari. Squeeze the juice of the lemon over everything and toss with the 0.25 cup chopped parsley. Serve immediately with extra lemon wedges.
