Ingredients

  • 3 whole ripe avocados
  • 1 whole lime, zested and juiced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup white onion, finely diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    Slice each avocado lengthwise around the large pit in the center, then twist the two halves apart and remove the pit by wedging a spoon underneath it and lifting it out.

    Using a spoon, scoop the soft avocado flesh from the skin into a medium bowl, breaking it into large chunks as you go.

    Zest the lime directly over the bowl by rubbing it against a microplane or zester, letting the fine flakes fall onto the avocado.

    Cut the lime in half and squeeze both halves over the avocado, catching any seeds between your fingers; pour the juice into the bowl.

    Place the onion on a cutting board, hold it steady with one hand, and slice it lengthwise from root to tip into thin strips, then rotate 90 degrees and slice crosswise into small cubes about the size of grain-of-rice pieces.

    Add the diced onion, chopped cilantro, salt, and black pepper to the bowl with the avocado.

    Using a fork, mash the avocado by pressing and twisting it against the bowl wall until it reaches the texture you like—chunky with some smooth creaminess, or very smooth, depending on your preference.

    Stir gently with the fork until the lime juice, onion, cilantro, and seasonings are evenly distributed throughout the guacamole.
