- 12 fillets anchovy fillets in oil
- 1 tbsp fresh thyme

Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 thinly sliced onions and 0.5 tsp salt; cook, stirring occasionally, until soft and golden brown, about 15 minutes.

Spread the caramelized onions evenly over the pastry, leaving a 1 inch border. Arrange 12 anchovy fillets in a lattice pattern on top.
