Ingredients

  • 1 sheet puff pastry sheet
  • 3 medium yellow onions
  • 2 tbsp olive oil
  • 12 fillets anchovy fillets in oil
  • 1 tbsp fresh thyme
  • ½ tsp salt
  • ¼ tsp black pepper

    Preheat oven to 400°F. Roll out the 1 sheet puff pastry on a floured surface to a 10x12 inch rectangle, then transfer to a baking sheet lined with parchment paper.

    Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 thinly sliced onions and 0.5 tsp salt; cook, stirring occasionally, until soft and golden brown, about 15 minutes.

    Spread the caramelized onions evenly over the pastry, leaving a 1 inch border. Arrange 12 anchovy fillets in a lattice pattern on top.

    Sprinkle with 1 tbsp fresh thyme leaves and a pinch of black pepper. Fold the pastry edges over the filling to create a rustic crust.

    Bake until the pastry is puffed and golden, about 20 minutes. Let cool for 5 minutes, then slice and serve warm.
