Ingredients
- 2.5 cups all-purpose flour
- 1 teaspoon instant yeast
- 1 teaspoon salt
- 1 cup warm water
- 3 tablespoons olive oil
- 1 tablespoon fresh rosemary
- ¼ cup sliced almonds

In a large bowl, mix 2.5 cups flour, 1 tsp yeast, and 1 tsp salt. Add 1 cup warm water and 2 tbsp olive oil; stir until a shaggy dough forms.

Turn dough onto a floured surface and knead for 8 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise in a warm spot for 30 minutes until doubled.

Preheat oven to 425°F. Punch down dough and transfer to a parchment-lined baking sheet. Press into a 10x8 inch oval about 1/2 inch thick.

Use a knife to cut 3 diagonal slashes through the dough, then gently stretch the slashes open with your fingers to create the classic leaf pattern.

Brush the dough with the remaining 1 tbsp olive oil. Sprinkle with 1 tbsp chopped rosemary and 1/4 cup sliced almonds, pressing them lightly into the surface.
