Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1.75 cups buttermilk
  • 4 tbsp butter, melted
  • 2 tbsp granulated sugar
  • 2 tsp baking powder

Instructions

    Heat your waffle iron on high heat until a drop of water sizzles and evaporates on contact, ~3 minutes.

    Whisk flour, baking powder, sugar, and a pinch of salt in a large bowl.

    Crack eggs into a second bowl, pour in buttermilk and melted butter, and whisk until combined.

    Pour wet into dry and fold gently with a spatula until just combined—lumps are okay, overworking makes dense waffles.

    Brush the waffle iron with a little butter, pour batter to the top, close, and cook until steam stops and the lid lifts easily, ~3 minutes.

    Slide the waffle onto a plate. Repeat with remaining batter. Serve hot with toppings of your choice.
