Ingredients
- 3 large egg whites
- ½ cup sugar
- 2 cups milk
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup mango

In a large bowl, beat the 3 egg whites with a pinch of salt until soft peaks form. Gradually add 1/4 cup of the sugar, beating until stiff, glossy peaks form, about 5 minutes.

In a wide skillet, bring 2 cups of milk and 1/4 cup of sugar to a gentle simmer over medium heat. Using a large spoon, drop 4 mounds of the meringue into the milk. Poach for 2 minutes per side, until just set. Remove with a slotted spoon and drain on a plate.

In a separate bowl, whisk the 3 egg yolks with the remaining 1/4 cup sugar and 1 teaspoon vanilla. Slowly whisk in 1 cup of the hot milk, then return the mixture to the skillet. Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon, about 5 minutes. Do not let it boil.

Pour the warm custard into 4 serving bowls. Place one poached meringue on top of each. Garnish with 1 cup of diced mango and a mint leaf if you have one. Serve immediately.
