Ingredients
- ¾ cup all-purpose flour
- 2 whole eggs
- 1 cup whole milk
- 2 tbsp butter, melted
- ½ cup jam or Nutella (or lemon + sugar to finish)
- 1 cup fresh berries or sliced fruit (optional garnish)

Whisk until smooth and thin, like heavy cream. Let rest 5 minutes.

Heat an 8-inch nonstick skillet over medium-high until water flicks sizzle, ~90 seconds.

Pour 1/4 cup batter into the center, immediately tilt and rotate the pan to spread thin.
