Ingredients

  • ¾ cup all-purpose flour
  • 2 whole eggs
  • 1 cup whole milk
  • 2 tbsp butter, melted
  • ½ cup jam or Nutella (or lemon + sugar to finish)
  • 1 cup fresh berries or sliced fruit (optional garnish)

Instructions

    Combine flour, eggs, milk, melted butter, salt, and pinch of sugar in a bowl.

    Whisk until smooth and thin, like heavy cream. Let rest 5 minutes.

    Heat an 8-inch nonstick skillet over medium-high until water flicks sizzle, ~90 seconds.

    Pour 1/4 cup batter into the center, immediately tilt and rotate the pan to spread thin.

    Cook 60-90 seconds until the bottom is light gold, then flip and cook 30 seconds on the other side.

    Slide onto a plate. Repeat with remaining batter. Spread with jam, add fruit, roll or fold, and serve warm.
