Ingredients
- 8 oz egg noodles or ramen noodles (straight, not curly)
- ¾ lb beef sirloin or flank steak, thinly sliced
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 3 whole scallions, sliced (white and green parts)
- 1 tbsp fresh ginger, minced
- 2 tbsp neutral oil (vegetable or canola)

Boil noodles in salted water until al dente, ~6 minutes. Drain and set aside.

Heat neutral oil in a large skillet over medium-high heat until shimmering, ~90 seconds.

Sear beef in a single layer for 90 seconds without moving. Flip and cook 60 seconds more until browned outside but still tender inside.

Add minced garlic and ginger, stir constantly for 30 seconds until fragrant.

Add cooked noodles, soy sauce, and sesame oil. Toss everything together for 2 minutes until noodles are glossy and coated.
