- 1 lb white fish fillets
- 8 corn tortillas
- 1 cup pineapple chunks
- 1 medium tomato
- ¼ cup mayonnaise
- 1 cup shredded lettuce

Pat the 1 lb white fish fillets dry and season both sides with salt and pepper. Heat 2 tbsp oil in a skillet over medium-high heat.

Cook the fish for 3-4 minutes per side, until golden and flakes easily with a fork. Transfer to a plate and flake into chunks.

In a bowl, mix the 1 cup pineapple chunks, 1 diced tomato, and a pinch of salt to make the salsa.
