Ingredients

  • 1 lb white fish fillets
  • 1 cup heavy cream
  • 1 whole lemon
  • 2 cloves garlic
  • ¼ cup fresh dill
  • ¼ cup fresh parsley
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Place the 1 lb fish fillets in a skillet and add water to cover. Bring to a simmer over medium heat and cook until the fish flakes easily with a fork, about 8 minutes.

    Drain the fish and let it cool slightly. Flake the fish into large chunks, removing any bones.

    In a food processor, combine the flaked fish, 1 cup heavy cream, zest and juice of 1 lemon, 2 garlic cloves, 0.25 cup dill, 0.25 cup parsley, 0.5 tsp salt, and 0.25 tsp pepper.

    Pulse the mixture until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.

    Transfer the dip to a serving bowl. Cover and refrigerate for at least 1 hour to let the flavors meld.

    Serve chilled with crackers, crostini, or fresh vegetables. Garnish with extra dill or a lemon wedge if you like.
