Ingredients
- 1 lb white fish fillets
- 1 cup heavy cream
- 1 whole lemon
- 2 cloves garlic
- ¼ cup fresh dill
- ¼ cup fresh parsley
- ½ tsp salt
- ¼ tsp black pepper

Place the 1 lb fish fillets in a skillet and add water to cover. Bring to a simmer over medium heat and cook until the fish flakes easily with a fork, about 8 minutes.

In a food processor, combine the flaked fish, 1 cup heavy cream, zest and juice of 1 lemon, 2 garlic cloves, 0.25 cup dill, 0.25 cup parsley, 0.5 tsp salt, and 0.25 tsp pepper.
