Ingredients
- 2 large potatoes
- 200 g cooked white fish
- 1 egg
- 50 g breadcrumbs
- 4 radishes
- 1 orange

Boil the 2 large potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with a splash of milk or water, then season with salt and pepper.

Flake the 200g cooked white fish into a bowl, add the 1 egg and 25g breadcrumbs, and mix until combined. Shape into 4 croquettes and coat with the remaining 25g breadcrumbs.

Heat 2 tbsp oil in a skillet over medium-high heat. Fry the croquettes until golden and crisp on all sides, about 6 minutes total.

Thinly slice the 4 radishes and toss with a handful of salad greens and the zest of the 1 orange. Dress with a squeeze of orange juice and a little olive oil.
