Ingredients

  • 2 rounds pita bread
  • 4 cups mixed greens (romaine, arugula, or lettuce)
  • 1.5 cups cherry tomatoes
  • 1 medium cucumber
  • 4 whole radishes
  • 1 tsp fresh sumac
  • 8 oz halloumi cheese
  • 1 whole lemon

Instructions

    Brush pita with olive oil. Cut into bite-sized pieces. Pan-fry over medium-high heat until golden and crispy, ~6 minutes, stirring occasionally.

    Slice cucumber and radishes thin. Halve cherry tomatoes. Toss greens with vegetables in a large bowl.

    Slice halloumi into 0.5-inch-thick planks. Heat a skillet over medium-high until very hot, ~1 minute.

    Sear halloumi 90 seconds per side without moving until golden brown. Transfer to a plate.

    Squeeze lemon juice over greens. Drizzle with 2 tbsp olive oil and a pinch of salt. Toss gently.

    Top salad with crispy pita, warm halloumi, and a sprinkle of sumac. Serve immediately.
