Ingredients
- 1 lb beef sirloin steak
- 2 bell peppers
- 1 onion
- 4 cups tortilla chips
- 1 tomato
- ¼ cup cilantro
- 2 tbsp fajita seasoning
- 2 tbsp olive oil

Slice the 1 lb beef sirloin steak into thin strips and toss with 1 tbsp fajita seasoning. Let sit while you prep the vegetables.

Slice the 2 bell peppers and 1 onion into thin strips. Dice the 1 tomato and chop the 0.25 cup cilantro; set aside.

Heat 1 tbsp olive oil in a large skillet over high heat. Add the beef in a single layer and cook until browned, about 3-4 minutes per side. Remove to a plate.

Add the remaining 1 tbsp olive oil to the skillet. Add the peppers and onion, and cook until softened and charred at edges, about 5-7 minutes.

Return the beef to the skillet, add the remaining 1 tbsp fajita seasoning, and stir everything together until heated through, about 2 minutes.

Spread the 4 cups tortilla chips on a platter. Spoon the beef and pepper mixture over the chips.
