Ingredients
- 1 lb waxy potatoes

- 1 large red or yellow bell pepper
- 1.5 tbsp ginger, minced
- 1 medium fresh chili pepper (or red pepper flakes)
- 2 tbsp tomato paste

Cut potatoes and carrots into 1-inch cubes. Dice the bell pepper and mince the chili.

Heat 3 tbsp oil in a large skillet over medium. Add ginger and chili, cooking until fragrant, 90 seconds.

Stir in tomato paste, coating the oil. Cook 1 minute, then add potatoes and carrots.

Pour in 1 cup water. Cover and simmer 8 minutes until potatoes start to soften.
