Ingredients

  • 1 lb waxy potatoes
  • 2 medium carrots
  • 1 large red or yellow bell pepper
  • 1.5 tbsp ginger, minced
  • 1 medium fresh chili pepper (or red pepper flakes)
  • 2 tbsp tomato paste

Instructions

    Cut potatoes and carrots into 1-inch cubes. Dice the bell pepper and mince the chili.

    Heat 3 tbsp oil in a large skillet over medium. Add ginger and chili, cooking until fragrant, 90 seconds.

    Stir in tomato paste, coating the oil. Cook 1 minute, then add potatoes and carrots.

    Pour in 1 cup water. Cover and simmer 8 minutes until potatoes start to soften.

    Add bell pepper and 1 tsp salt. Simmer uncovered 3 more minutes until all vegetables are tender.

    Taste and adjust salt and pepper. Serve hot in bowls.
