Ingredients
- 1 large eggplant
- 3 tbsp olive oil
- 1 medium onion
- 2 cups tomatoes
- ½ cup green olives
- 2 tbsp capers
- 1 cup ricotta cheese
- ¼ cup fresh basil

Cut the 1 large eggplant into 1-inch cubes and toss with 1 tsp salt. Let sit in a colander for 15 minutes, then pat dry with paper towels.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the eggplant and cook, stirring occasionally, until golden and tender, about 10 minutes. Transfer to a plate.
