Ingredients

  • 1 whole bagel
  • 1 large egg
  • 1 tbsp butter
  • 1 slice cheddar cheese
  • 1 handful arugula
  • 1 pinch salt

Instructions

    Slice the bagel in half and toast it until golden and crisp, about 3 minutes.

    Melt 1 tbsp butter in a small skillet over medium heat. Crack in 1 egg and cook until the white is set and the edges are crispy, about 3 minutes. Sprinkle with a pinch of salt.

    Flip the egg, lay 1 slice of cheddar on top, and cook until the cheese melts and the yolk is still runny, about 1 minute.

    Place the egg-cheese stack on the bottom bagel half, top with 1 handful of arugula, and close with the top half. Serve warm.

    If you like, add a dash of hot sauce or black pepper before closing the sandwich.
