Ingredients

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups milk
  • ½ cup semisweet chocolate chips
  • ¼ cup heavy cream

    Preheat oven to 425°F. Line a baking sheet with parchment paper.

    In a medium saucepan, bring 1 cup water and 1/2 cup butter to a boil over medium-high heat. Remove from heat and stir in 1 cup flour until a ball forms.

    Return pan to low heat, stirring for 1-2 minutes until dough pulls away from sides. Transfer to a bowl and let cool 5 minutes.

    Beat in 4 eggs one at a time until dough is smooth and glossy. Spoon or pipe 4-inch logs onto the baking sheet, spacing 2 inches apart.

    Bake for 20-25 minutes until puffed and golden brown. Turn off oven, leave pastries inside for 10 minutes, then cool completely on a rack.

    Whisk pudding mix with 2 cups milk for 2 minutes until thick. Refrigerate until ready to fill.

    Split each pastry horizontally, fill with pudding, and top with chocolate chips melted with 1/4 cup heavy cream (microwave 30-second bursts).
