Ingredients

  • 2 slice bread slices
  • 2 large eggs
  • 4 strips bacon
  • 1 cup, shredded cheddar cheese
  • 2 tbsp tomato sauce
  • 6 whole cherry tomatoes
  • 1 tbsp butter
  • 1 pinch salt

Instructions

  1. 1

Cook the 4 bacon strips in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and set aside.

  2. 2

In the same skillet, melt the 1 tbsp butter over medium heat. Crack the 2 eggs into the skillet and fry until the whites are set but yolks are still runny, about 3-4 minutes. Season with the pinch of salt.

  3. 3

Toast the 2 bread slices until golden and crisp. Place them on a baking sheet.

  4. 4

Top each toast with half of the crispy bacon and half of the 1 cup shredded cheddar cheese. Broil for 2-3 minutes until the cheese is melted and bubbly.

  5. 5

Carefully place one fried egg on each toast. Drizzle with the 2 tbsp tomato sauce and scatter the 6 cherry tomatoes (halved) on top. Serve immediately.
