Ingredients
- 1.5 cups all-purpose flour
- ½ cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ¾ cup milk
- 1 large egg
- 1 medium apple

Preheat oven to 350°F. Grease a 9-inch round cake pan or line with parchment paper.

In a large bowl, whisk together 1.5 cups flour, 0.5 cup brown sugar, 2 tsp baking powder, 1 tsp cinnamon, and 0.5 tsp salt.

In a small bowl, beat 1 egg with 0.75 cup milk. Pour into dry ingredients and stir until just combined—batter will be thick and slightly lumpy.

Peel and core 1 apple, then slice thinly. Fold half the slices into the batter.

Pour batter into prepared pan. Arrange remaining apple slices on top and sprinkle with extra brown sugar and cinnamon if desired.

Bake for 30-35 minutes, until a toothpick inserted in center comes out clean and top is golden brown.
