Duck Ragu Pasta

Ingredients
- 1 lb duck breast
- 1 medium onion
- 1 can (15 oz) canned crushed tomatoes
- 1 tsp dried oregano
- 8 oz pasta
- ½ cup Parmesan cheese

Cook the 8 oz pasta in salted boiling water until al dente, about 10 minutes. Reserve 1 cup pasta water, then drain.

While pasta cooks, heat a large skillet over medium-high. Add the 1 lb duck breast, skin-side down, and sear until browned, 5 minutes. Flip and cook 3 minutes more. Remove and slice thinly.

In the same skillet, add the 1 sliced onion and cook over medium until soft, about 5 minutes. Stir in the 1 tsp oregano and the 15 oz crushed tomatoes. Simmer until thickened, 5 minutes.

Return the sliced duck to the sauce and stir in the cooked pasta. Add a splash of reserved pasta water if needed to loosen. Cook 2 minutes until everything is hot.

Serve topped with the 0.5 cup grated Parmesan.
