Ingredients

  • 1 cup dosa mix
  • 1.5 cups water
  • ½ cup toor dal
  • 1 cup mixed vegetables
  • 2 tbsp sambar powder
  • ¼ cup coconut milk

Instructions

    In a bowl, whisk 1 cup dosa mix with 1.5 cups water until smooth; let rest while you make sambar.

    In a pot, combine 0.5 cup toor dal, 1 cup mixed vegetables, 2 tbsp sambar powder, and 2 cups water. Bring to a boil, then simmer until dal is soft and vegetables are tender, about 15 minutes.

    Stir in 0.25 cup coconut milk and simmer 2 minutes until slightly thickened; season with salt.

    Heat a nonstick skillet over medium-high. Pour a ladleful of batter and spread into a thin circle; cook until edges crisp and golden, about 2 minutes per side.

    Serve dosa hot with sambar and a squeeze of lime.
