Ingredients

  • 1 lb Ground beef
  • 6 cups Beef broth
  • 3 tbsp Dark soy sauce
  • 1 tbsp Fish sauce
  • 2 whole Star anise pods
  • 8 oz Rice vermicelli noodles
  • 1 handful Fresh cilantro, mint, lime, and Thai chili (for garnish)

Instructions

  1. 1

Bring a pot of salted water to a boil for the noodles. While it heats, brown the ground beef in a large pot over medium-high heat, breaking it up with a spoon until no pink remains, about 5 minutes.

  2. 2

Pour the beef broth into the pot with the meat. Add dark soy sauce, fish sauce, and star anise. Bring to a simmer and cook uncovered for 10 minutes until the broth is dark and fragrant.

  3. 3

Cook rice noodles in the boiling water until tender, about 4 minutes. Drain well.

  4. 4

Divide noodles among four bowls. Ladle the hot broth and beef over the noodles.

  5. 5

Top with fresh cilantro, mint, sliced chili, and a squeeze of lime. Serve immediately.
