Ingredients
- 1 lb Ground beef
- 6 cups Beef broth
- 3 tbsp Dark soy sauce
- 1 tbsp Fish sauce
- 2 whole Star anise pods
- 8 oz Rice vermicelli noodles
- 1 handful Fresh cilantro, mint, lime, and Thai chili (for garnish)

Bring a pot of salted water to a boil for the noodles. While it heats, brown the ground beef in a large pot over medium-high heat, breaking it up with a spoon until no pink remains, about 5 minutes.

Pour the beef broth into the pot with the meat. Add dark soy sauce, fish sauce, and star anise. Bring to a simmer and cook uncovered for 10 minutes until the broth is dark and fragrant.

Cook rice noodles in the boiling water until tender, about 4 minutes. Drain well.

Divide noodles among four bowls. Ladle the hot broth and beef over the noodles.
