Ingredients

  • 2 cups cooked short-grain rice
  • 4 frozen croquettes (korokke)
  • ½ pound ground beef or tofu
  • 2 tablespoons soy sauce
  • 2 egg yolks
  • 1 sheet nori (dried seaweed)
  • 2 green onions
  • 1 teaspoon toasted sesame seeds

Instructions

    Cook the croquettes according to package directions until golden and crispy, about 15 minutes in a 400°F oven or as directed.

    In a skillet over medium heat, cook the 0.5 pound ground beef or crumbled tofu until browned and cooked through, about 5-7 minutes. Add 2 tablespoons soy sauce and stir for 1 minute until absorbed.

    Divide the 2 cups cooked rice between two bowls. Top each with half of the meat mixture and 2 croquettes.

    Slice the 2 green onions thinly and cut the 1 sheet nori into thin strips. Sprinkle over the bowls along with 1 teaspoon sesame seeds.

    Carefully place one raw egg yolk on top of each bowl. Serve immediately, letting the yolk mix into the rice as you eat. Add ketchup or lemon if desired.
