Ingredients
- 8 oz dark chocolate
- 1.5 cups heavy cream
- 1 cup chocolate wafer cookies
- 4 tbsp butter
- 1 cup raspberries
- 2 oz white chocolate

Crush the 1 cup chocolate wafer cookies into fine crumbs. Mix with 4 tbsp melted butter and press into the bottom of a 9 inch springform pan. Chill while making the mousse.

Melt 8 oz dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Let cool slightly.

Whip 1.5 cups heavy cream to soft peaks. Fold the melted chocolate into the whipped cream gently until no streaks remain.

Pour the mousse over the crust and smooth the top. Chill for at least 2 hours until set.

Before serving, top with 1 cup raspberries and shave 2 oz white chocolate into shards. Arrange shards on top.
