Ingredients

  • 1 lb crab meat, fresh or canned, drained
  • 3 tbsp curry powder
  • ½ cup coconut milk
  • 2 tsp fish sauce
  • 1 whole lime
  • 2 whole eggs
  • 1.5 cups steamed white rice

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 1 minute.

    Add curry powder and cook, stirring constantly, until fragrant, about 90 seconds.

    Add crab meat and stir gently to coat evenly with curry. Cook 2 minutes.

    Pour in coconut milk and fish sauce. Stir and simmer 3 minutes until sauce thickens slightly.

    Squeeze lime juice over the crab curry and taste for salt. While it rests, fry eggs sunny-side up in a separate skillet until whites set but yolks jiggle.

    Divide rice between two plates, top with crab curry, and place a fried egg alongside. Serve with pickled jalapeños and kimchi on the side.
