Cucumber Sushi Roll

Ingredients
- 1 cup sushi rice
- 1.25 cups water
- 2 tbsp rice vinegar
- 1 tsp sugar
- 1 medium cucumber
- 2 sheets nori sheets

Rinse the 1 cup sushi rice in cold water until the water runs clear. Combine with 1.25 cups water in a pot, bring to a boil, then cover and simmer on low until the water is absorbed and rice is tender, about 15 minutes.

While the rice cooks, slice the cucumber into thin strips, about 1/4 inch thick. Set aside.

When the rice is done, let it cool slightly, then fold in the 2 tbsp rice vinegar and 1 tsp sugar. Spread the rice over the 2 nori sheets, leaving a 1 inch border at the top.

Place the cucumber strips along the bottom edge of each nori sheet. Roll tightly from the bottom, using the border to seal. Slice each roll into 6 pieces.

Sprinkle with sesame seeds if you have them. Serve with soy sauce for dipping.
