Ingredients
- ¾ lb ground lamb
- 1.5 tsp Urfa chili flakes (or smoked paprika + cayenne mix)
- ½ tsp cumin
- 2 pieces flat pita or naan bread
- ½ cup plain yogurt
- 1 whole lemon
- ¼ cup fresh herbs (parsley, mint, or dill, chopped)

Mix ground lamb with Urfa chili, cumin, 0.5 tsp salt, and black pepper until just combined.

Heat 2 tbsp olive oil in a large skillet over medium-high until smoking, about 90 seconds.

Crumble the lamb into the skillet, breaking into small pieces, and cook without stirring for 2 minutes until edges char.

Stir and break up clumps, then cook 3 more minutes until no pink remains and meat is deeply browned.

Warm the pita in a dry skillet or over a flame for 30 seconds per side until pliable.
