Ingredients

  • 1.5 lbs sweet potatoes, peeled and cut into ¾-inch cubes
  • 4 tbsp butter
  • 3 tbsp brown sugar
  • ¾ tsp ground cinnamon
  • ½ cup pecans, roughly chopped
  • 1 pinch salt and black pepper to taste

Instructions

    Heat 2 tbsp butter in a large skillet over medium-high until foaming, about 1 minute.

    Add sweet potato cubes and spread in a single layer. Cook without stirring for 4 minutes until bottom edges brown.

    Stir the potatoes and add remaining 2 tbsp butter, brown sugar, and cinnamon. Toss to coat, then cook 3 minutes stirring occasionally.

    Add pecans and stir once more. Cook 1 minute until fragrant and pecans are warm.

    Season with salt and pepper. Transfer to a serving plate and serve immediately.
