  • 2 tbsp olive oil
  • ½ tsp each salt and black pepper
  • ¼ cup mayonnaise or cashew cream
  • 1 tbsp sriracha or hot sauce
  • 1 whole lime (juiced)

    Scrub sweet potatoes under cold water. Pat dry with a kitchen towel.

    Cut each potato lengthwise into 1/4-inch-thick fries. Aim for even thickness.

    Toss fries with olive oil, salt, and pepper in a bowl until fully coated.

    Spread fries in a single layer on a sheet pan. Leave no overlap.
