Ingredients
- 2 whole sweet potatoes, medium
- 3 tbsp olive oil
- 3 whole garlic cloves, minced
- ½ tsp red pepper flakes
- ½ tsp fleur de sel or coarse sea salt
- ½ whole fresh lime (juiced)

Preheat oven to 425°F. Cut sweet potatoes lengthwise into 1/4-inch sticks, then pat dry with paper towels.

Toss fries with 2 tbsp olive oil and a big pinch of salt, then spread on a sheet pan in a single layer.

Roast for 14–16 minutes, stirring halfway through, until edges are dark golden and crispy.

While fries cook, warm 1 tbsp oil in a small skillet over medium, add minced garlic and red pepper flakes, cook 60 seconds until fragrant.
