Ingredients

  • 2 whole sweet potatoes, medium
  • 3 tbsp olive oil
  • 3 whole garlic cloves, minced
  • ½ tsp red pepper flakes
  • ½ tsp fleur de sel or coarse sea salt
  • ½ whole fresh lime (juiced)

Instructions

    Preheat oven to 425°F. Cut sweet potatoes lengthwise into 1/4-inch sticks, then pat dry with paper towels.

    Toss fries with 2 tbsp olive oil and a big pinch of salt, then spread on a sheet pan in a single layer.

    Roast for 14–16 minutes, stirring halfway through, until edges are dark golden and crispy.

    While fries cook, warm 1 tbsp oil in a small skillet over medium, add minced garlic and red pepper flakes, cook 60 seconds until fragrant.

    Pour garlic chili oil over hot fries, toss well, then sprinkle with fleur de sel and a squeeze of lime juice.

    Serve immediately while still crispy.
