Ingredients

  • 1.5 cups masa harina (corn flour)
  • 1 lb beef (ground or shredded cooked)
  • 3 whole peppers canned chipotles in adobo
  • ½ cup sour cream
  • ½ cup queso fresco, crumbled
  • ½ medium diced white onion
  • ¼ cup fresh cilantro, chopped
  • ¾ cup chicken broth

    Mix masa harina with 0.75 cup warm broth and a pinch of salt until a thick dough forms, about 2 minutes.

    Divide dough into 4 balls. Flatten each into a 3-inch disk on plastic wrap, then use your thumb to pinch up the edges into a shallow bowl shape.

    Heat 2 tbsp oil in a large skillet over medium-high. Fry sopes 3 minutes per side until golden and crispy. Transfer to a plate.

    In the same skillet, brown ground beef over medium-high, breaking it up, until no pink remains, about 5 minutes.

    Blend chipotles with 0.25 cup water and 1 tbsp adobo sauce until smooth. Pour into beef, add diced onion, and simmer 2 minutes until glossy.

    Spoon chipotle beef onto each sope. Top with sour cream, queso fresco, and cilantro. Serve immediately.
